Easy Bisquick Chocolate Chip Cookies

WHAT YOU NEED TO MAKE EASY BISQUICK CHOCOLATE CHIP COOKIES
Bisquick, light brown sugar, butter, egg, vanilla and chocolate chips.
This is a fantastic chocolate chip cookies recipe to have on hand if you run out of flour and have Bisquick in the pantry. I have flour in the house but have been making these cookies because they are so darn good and such a cinch to make.
HOW TO MAKE EASY BISQUICK CHOCOLATE CHIP COOKIES
Preheat oven to 375 degrees f. In a large bowl, cream butter and brown sugar until smooth, then add egg and vanilla, mix until well blended. Next add Bisquick, mix until well blended (do not over mix). Last add chocolate chips, mix until evenly blended (do not over mix). Drop rounded tablespoons of cookie dough about 2 inches apart on ungreased cookie sheet(s). Bake on middle rack of oven for 8-10 minutes, until edges are golden brown. When ready, remove from oven, allow to cool a few minutes then transfer to cooling rack.

Ingredients
- 1/2 cup butter (salted), softened to room temperature
- 1 cup light brown sugar, packed
- 1 egg
- 2 teaspoons pure vanilla extract
- 2 3/4 cups Bisquick Pancake & Baking Mix
- 1 cup semi-sweet chocolate chips (more if you like)

Tips
I use a medium Pampered Chef scooper, the recipe makes 2 dozen good size cookies.
If you like nuts, add 1/2 cup of chopped pecans/walnuts.
Adjust baking time according to how fast/slow your oven bakes.
