    Today’s recipe is a quick and easy dip that only has 4 ingredients – Fiesta Ranch Dip, Sour Cream, Rotel, Shredded Cheddar Cheese!

    UPDATE April 23, 2014: Yesterday I adapted this recipe using a packet of Hidden Valley Ranch Original Salad Dressing and Seasoning Mix, along with an 11 oz. can of Mexicorn (variation recipe below)…it was awesome! If I had to choose between the two recipes, this new version would be my pick! My friends gobbled it up and asked for the recipe! Grab the recipe below.

    Fiesta Ranch Dip

    Ingredients

    • *1 packet Hidden Valley Fiesta Ranch Dip – (reduce amount for less intense flavor)
    • 10 ounce can Rotel Original (drain excess liquid)
    • 16 oz sour cream
    • 1 cup finely shredded cheddar cheese

    Directions
    Mix all ingredients in a medium size bowl. Chill in fridge for 1 hour.  Serve with your favorite tortilla chips.  Great with veggies too!  Enjoy!


    Tips for “jazzing” up the dip (grab recipe below):

    • Add a can of mexicorn or sweet corn (drained).  I LOVE this dip with corn added!
    • Top with finely shredded cheddar cheese, shredded lettuce, diced tomatoes and olives.

      i want to know why do all dips have to be hot or spicey i have looked at so many but all ask for rotel or taco seasoing or red pepper i am looking for a dip i can eat with out getting sick

      I combined some of the ideas posted by other reviewers. I used a packet of regular Hidden Valley because that’s what I had, but I added about a Tbs of taco seasoning. I added a small can of green chili’s & 4 diced green onions with some chopped ripe olives. It’s DELICIOUS!

      Years ago I received a Teacher’s Gift Basket with all the ingredients (except the perishable cheese) in a cute dip bowl! I have gifted the same, with the recipe, over and over. Always a hit!

      I make this but I add one bunch of chopped green onions, 2 cans of black beans drained and rinsed, 2 can of corn drained, and 2 small cans of chopped black olives. Also instead of ranch mix I use I package of taco seasoning. Everyone requests this for every party I have or attend. It’s the best!

        Rotel is just tomatoes and green chilies. You can find it in a can with the canned tomato products. Super tasty in this dip and many other dishes too!

      I accidentally bought the fiesta ranch dip mix when I was making veggie pizza and didn’t have time to go back to the store so I had to just use it. It was a big hit! Makes a whole different, great flavor.

      I used Mexican corn, bacon and diced jalapenos to taste along with sour cream, mayo and ranch dressing mix. Also 1 cup of cheddar cheese too.

      I love this dip and am so glad you shared it! It's so easy. I've made it many times and always get compliments. I like mine with Kraft Mexican cheese blend.

      I made a double batch of this for a family party over the weekend. I accidentally bought regular ranch mix but it was still a hit! I will probably try making it again with a homemade ranch mix (so there's no unwanted ingredients)

      What is Rotel Original? Is it a meat sauce or maybe beans?

        Rotel is a brand of tomatoes with green chilis in it. Usually on the top shelf where you find tomato sauce and tomatoes.

        It’s in the canned tomatoes isle at the grocery store. Basically diced tomatoes and green chilies
