    Today’s recipe is a quick and easy dip that only has 4 ingredients – Fiesta Ranch Dip, Sour Cream, Rotel, Shredded Cheddar Cheese!

    UPDATE April 23, 2014: Yesterday I adapted this recipe using a packet of Hidden Valley Ranch Original Salad Dressing and Seasoning Mix, along with an 11 oz. can of Mexicorn (variation recipe below)…it was awesome! If I had to choose between the two recipes, this new version would be my pick! My friends gobbled it up and asked for the recipe! Grab the recipe below.

    Ingredients

    • *1 packet Hidden Valley Fiesta Ranch Dip – (reduce amount for less intense flavor)
    • 10 ounce can Rotel Original (drain excess liquid)
    • 16 oz sour cream
    • 1 cup finely shredded cheddar cheese

    Directions
    Mix all ingredients in a medium size bowl. Chill in fridge for 1 hour.  Serve with your favorite tortilla chips.  Great with veggies too!  Enjoy!


    Tips for “jazzing” up the dip (grab recipe below):

    • Add a can of mexicorn or sweet corn (drained).  I LOVE this dip with corn added!
    • Top with finely shredded cheddar cheese, shredded lettuce, diced tomatoes and olives.

      I make this with 1 pig. Hidden valley fiesta mix, 16oz. Sour cream,1 LG. Tomato seeded & diced, sm.can chopped blk.olives, 1-2 c.shredded cheddar and a heaping tbsp.green salsa. Adjust the salsa to your heat taste.

      Love this dip.. I love onions .. half of a small onion, chopped, 1/2 sm can of chopped black olives, 1 to 2 tomatoes. Mix with the 16 Oz of sour cream and enjoy.

      I use cream cheese instead of sour cream and add a can of green chili instead of tomatoes along with the Hidden Valley RANCH dip mix.

      I just made the updated version for my Halloween get together. I added mrs.dash southwest chipotle, and saracha bc we like a little kick. also I had made a black bean corn salsa with rotel so I used that and it's so yummy! it's in the fridge!

      I made this yesterday and within mins it was gone and had to have someone pick up the stuff for another batch that didn't last long either. Will def be a new dip for get together. 🙂 Thanks. 🙂

      You can swap the sour cream for 0% Greek yogurt to make it healthier. You can't tell a difference!
