They are soft and chewy with a crispy edge, loaded with semi-sweet chocolate chips and nutty oats. Chocolate Chip Cookie perfection. Bonus, they can be made gluten-free too.

This cookie recipe was King Arthur Baking Company’s 2015 recipe of the year. My sister sent me the recipe a few weeks ago, they have been her go-to chocolate chip cookies for the last year or so. Being married to a cookie monster, making the same chocolate chip cookies for decades, I was ready to try something new. Two glasses of milk and six cookies later, my husband said the recipe is a keeper! He still loves my Perfect Chocolate Chip Cookies, but these were a tasty, welcome change.

Chocolate Chip Oatmeal Cookies

Ingredients
- 1 cup unsalted butter, at room temperature
- 1 cup light brown sugar, packed
- 1/2 cup granulated sugar
- 1 large egg, at room temperature
- 1 large egg yolk, at room temperature
- 1 tablespoon pure vanilla extract
- 2 cups unbleached all-purpose flour
- 1 cup rolled oats – quick-cooking or old-fashioned
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon kosher salt OR 3/4 teaspoon regular table salt
- 3 cups semi-sweet chocolate chips
Directions
Preheat oven to 325 degrees F. Prepare baking sheets with parchment paper or lightly spray with non-stick cooking spray.
In a large bowl mix butter, sugar and brown sugar until blended well, smooth and creamy.
Next add egg, egg yolk and vanilla – mix well until smooth.
In a medium size bowl, add flour, oats, salt, baking soda and baking powder, mix well then add to the butter mixture. Mix until the flour mixture has completely incorporated – Do Not Over Mix.
Last, fold the chocolate chips into the cookie dough until evenly distributed – Do Not Over Mix.
Drop spoonfuls of cookie dough (pick the size you like) on prepared baking sheets 1 1/2 to 2 inches apart.
Bake on middle rack of oven for 12-17 minutes depending on size of cookies. Cookies are ready when they start to turn light golden brown with slightly dark edges.
Remove cookies and allow to cool for a few minutes then transfer to cooling rack. Enjoy!

Tips
- be sure to use unsalted butter, at room temperature
- eggs need to be at room temperature too (1 large egg and 1 large egg yolk)
- recipe makes 20-100 cookies depending on size – I used a medium size Pampered Chef Scoop which made approximately 42 cookies

I absolutely loved these cookies, I measured out my flower and I sifted it, and made sure there was no access. I added a little cinnamon and a little sugar cinnamon on one side of a cookie before I baked it it turned out really good, this is my new favorite they were moist they were tender crispy around the edges this is the best recipe I have ever made. Good cookie but too cakey for me. My fault for not seeing this recipe adds both baking soda & powder. Combined they make cookies rise. I wanted a flatter chewy cookie. Still, this one is still good!👍🏾

Well have to say despite the positive reviews, I couldn’t even taste the oats. I triple checked all my measurements. Found the cookies lacking in flavor and was disappointed. Glad others were happy though! 🙂

I have made this recipe so many times and they are amazing! BUT the last 3 times I’ve made them they have come out completely spread and melted on the cookie sheet. I haven’t changed a thing – recipe, ingredients/brands, followed to a T. What is going on?!

Shaakir, check your baking soda and baking powder to see if they are fresh,that’s often why cookies/baked goods are flat if you followed the recipe to a T measuring everything properly.Even if they are flat, they are probably still delicious!

Flavor was awesome but mine ended up being super tough. Like I count commit murder with these. Could I have maybe over baked them?

I added the whole two eggs, salted butter and left out the salt, 1 cup raisins, 1 cup chocolate chips, an extra 1 or half cup of oats, and 1 teaspoon cinnamon. Plus only put 1 teaspoon of vanilla. Amazing cookies. Will use often.

Hi Roger – Check this out. It depends on what texture you want your cookies. “Old-fashioned oats have been cut,steamed, and flattened with large rollers. Steel-cut oats are not as highly processed and look like tiny pellets. They produce a more al dente result.”
