With just a few ingredients, this pretty and absolutely delicious side dish will compliment so many meals. The simple ingredients allow the butternut squash to really shine. Simple never tasted so good!
All you need…one butternut squash (about 3 pounds), garlic, olive oil, salt and pepper.
To make – peel and seed squash then cut into 1 inch bite size pieces.
Place cut butternut squash in a large bowl, drizzle with extra virgin olive oil, sprinkle with minced garlic and season with salt and pepper. Mix well. Pour squash in a single layer on baking sheet or roaster. Place on middle rack of oven and roast for 25 to 30 minutes, turning them once half way through roasting. Squash is ready when it’s tender and lightly browned.
