    TIPS
    • This recipe is super easy to adapt:
    • Substitute beef with ground turkey or chicken.
    • Don't have Rotel? Substitute with 1 cup salsa.
    • Not a fan of onion, skip it.
    • You can add peppers, corn and more to the ground beef.
    • Substitute black beans with pinto beans.
    • Not a fan of a lot of cheese? Reduce cheese by half - skip folding the 1 cup of cheese into mixture and just add 1 cup cheese on top.

Good recipe! But I would use corn tortillas or corn chips instead of flour tortillas that turn soggy.

This was great. I have a picky eater in the house and 8 people from age 1 thru 50… every one is happy. Topped with shredded lettuce and tomatoes served with fresh guacamole

I made this on my last solo camping trip. I halved the ingredients and used salsa instead of Rotel. I still had enough for two hearty meals! It was absolutely delicious and so easy. I particularly liked that it was all done in one skillet. Thanks so much! Yum. 🙂
