I’m a Greek girl with a tad bit of Irish in me…and I love gyros!!!

Okay…on with the recipe.
I love good leftovers! For dinner last night, I cooked a bunch of chicken breast in a skillet. I cut the chicken into bite size pieces, cooked them with a little bit of garlic flavored olive oil and sea salt, then squeezed fresh lemon juice on top when they were done. Today, I used what was leftover to make the Gyro.
I didn’t use Penzeys’ Gyro recipe this time, but I did use their Greek seasoning for the chicken. I also used their recipe for Tzatziki Sauce/Greek Sauce, the recipe is below.
Below is how I made my Chicken Gyro Wrap with leftover chicken. You can start from the beginning and marinade your meat according to Penzeys’ recipe ~ or you can do what I did, use pre-cooked chicken and just sprinkle on the Greek seasoning.
When it comes to the amount for each ingredient, that depends on how many gyros you’re making. For the spinach, chicken, tomatoes, onions, beets, and feta, use as much or little as you like. As for the amount of Greek seasoning, season to your liking. I like a lot of seasoning! Make sure the seasoning you’re using isn’t loaded with salt, that can ruin the taste. If that’s the case, less is more.
Ingredients
Chicken Breast {enough for the number of Gyros you want to make}
Olive Oil
Greek Seasoning {I use Penzeys} * See recipe blend and/or brand available in stores below
Fresh Baby Spinach {handful for one Gyro}
Diced Tomatoes – {I used Plum}
Chopped Red Onion
Sliced Beets – {I use canned ~ not pickled}
Crumbled Feta
Greek Pita or Tortilla – {I used a tortilla this time}
Penzeys Tzatziki Sauce Recipe {Greek Sauce}
{MIX THE FOLLOWING INGREDIENTS TOGETHER}
1 Cup Plain Yogurt
2-3 Teaspoons Greek Seasoning
2 Tablespoons of Diced Cucumber
* I added a Splash of Lemon Juice
Directions
Place your cooked chicken in a bowl and lightly coat with olive oil. Next, generously coat chicken with Greek seasoning, then warm it in a skillet or in a microwave. Next, take your pita/tortilla, place it on a plate, top it with a handful of spinach. Place the warm chicken on top and add your tomatoes, red onion, beets and feta. Drizzle with Tzatziki sauce, wrap it up….ENJOY!
My girlfriend gave me a beautiful gift basket filled with lots of goodies.
One goody was a bottle of Garlic Olive Oil – chicken is so good with this stuff!
