Slow Cooker Chicken Tortilla Soup

Today’s tried and true is a fantastic recipe that’s sure to warm you up this fall and winter, Slow Cooker Chicken Tortilla Soup. This is a big bowl of comfort!

SLOW COOKER CHICKEN TORTILLA SOUP – This chicken tortilla soup is absolutely delicious, full of flavor and simple to throw together. Loaded with tender chicken, corn, black beans and more. This is a warm, hearty, stick-to-your-bones soup – comfort food at its best.

This awesome recipe was found on Campbell’s Kitchen. Head over to read the rave reviews. My husband and I both give it 5 stars!

What you need: boneless, skinless chicken breasts, picante sauce, whole kernel corn (frozen or canned, I used Mexicorn), cream of chicken soup, water, black beans, ground cumin, shredded cheddar cheese, fresh cilantro and corn tortillas.

This recipe is easy to adapt too. You can make your own homemade condensed cream of chicken soup (link to recipe below), or use reduced fat soup. You can add more heat, using a hot Picante sauce or tossing in some green chilies or jalapenos. I wanted more corn so I used two 11 ounce cans of Mexicorn (golden whole kernel corn with red and green sweet peppers).

To make – place chicken pieces in slow cooker, then add Picante sauce, soup, corn, beans, water and cumin. Stir, mixing well. Cover and cook on low for 4-5 hours (or 2 to 2 1/2 hours on high) until chicken is cooked through and ready. Be sure to adjust cooking time according to how fast/slow your cooker cooks. When ready, add corn tortilla strips, cheddar cheese and cilantro, mix well, cover and cook an additional 15 minutes. Serve with additional cheese and fresh cilantro on top if you like. Enjoy!

I made a few changes in the process, opting to mix everything in a large bowl, then pouring the soup mixture over the chicken and mixing. I also sprayed my slow cooker with non-stick cooking spray.

Ingredients

1 cup Pace Picante Sauce – Medium
2 cans condensed Cream of Chicken Soup (can substitute with 98% Fat Free or make homemade condensed cream of chicken soup)
1 1/4 pounds boneless, skinless chicken breasts cut into 1/2-inch pieces
2 cups frozen whole kernel corn (I used cans of Mexicorn, 11 ounces each)
1 can black beans, rinsed and drained (15 ounce can)
1 1/3 cups of water
1 teaspoon ground cumin
4 corn tortillas (6-inch size), cut into strips
1 cup shredded Cheddar cheese
1/3 cup fresh cilantro, chopped

Easy Amish Sour Cream Cornbread – A quick, easy, super moist, dense, delicious cornbread that is made from scratch. The perfect side for so many meals. The best cornbread I have ever made!

I saved this recipe on Pinterest over four years ago, always wanting to give it a try, I am so glad I finally did. This recipe is from A Cracking Good Egg Blog (Cracking Good Egg sited an Amish recipe site as the original source, however that site is no longer up and running).

The magic to this amazing cornbread is the sour cream, it is so moist and tender with just a hint of sweetness. Even better, it’s simple to make. I was done mixing the dough before my oven was pre-heated. I love easy recipes that deliver on taste and are a cinch to make. This is sure to be on regular rotation.

I know people can be pretty opinionated when it comes to cornbread, especially in the South. (Side note – I never knew people had such strong opinions for mayonnaise, head over to my post on Mayonnaise Wars and Facebook to read the comments, people will set you straight over mayo. I guess Duke’s Mayonnaise is the best in the land, period. End of story. And don’t EVER place Miracle Whip in the category of mayonnaise. Everrrr. So I’m ready for people to try to set me straight on cornbread). I may live in Georgia now, but I am from the Mid-West, born and raised in Michigan. I have tried a lot of cornbread recipes over the years, but THIS Amish recipe is my kind of cornbread. Some people won’t even touch a piece of cornbread unless it comes from a cast iron skillet. For me, some cornbread is just too dry and gritty. This recipe is perfection. It’s the sour cream…they had me at sour cream.

Easy Amish Sour Cream Corn Bread

Ingredients

3/4 cup cornmeal
1 cup all-purpose flour
2 1/2 Tablespoons white granulated sugar
1 teaspoon baking soda
1 teaspoon cream of tartar
1 teaspoon salt
1 cup sour cream (regular or reduced fat – full fat is best)
1 large egg, beaten
2 Tablespoons butter, melted
1/4 cup milk

Directions

Preheat oven to 400 degrees f. and grease a 9×5 bread pan with non-stick cooking spray.

In a large bowl, add all of the dry ingredients (cornmeal, flour, sugar, baking soda, cream of tartar and salt) and mix well using a whisk. Next, add wet ingredients (sour cream, egg, butter and milk), using a spoon, mix until just blended (do not over mix) then pour batter into baking pan spreading evenly.

Bake on middle rack of oven for 30 to 35 minutes. Be sure to check the bread using a toothpick in the center, making sure it comes out clean. Remove from oven, allow to cool for 10 minutes then remove from pan. Enjoy!

Tips

This bread is best served warm but is pretty good cold too.
Heats up nicely in the microwave (less than 10 secs for one slice).
Serve with butter, honey, honey butter and more.
As for cornmeal, you can use fine or medium-ground, whatever you prefer or have in the pantry.

Today’s recipe is sure to be a new go-to family favorite – Easy Slow Cooker Smothered Chicken!

Easy Slow Cooker Smothered Chicken – With just a few ingredients and minutes to throw together, this simple and flavorful slow cooker smothered chicken with gravy is a meal the whole family will love! Serve the chicken and gravy over mashed potatoes, rice or egg noodles. This is the best comfort food during fall and winter, perfect for a busy day…let your slow cooker do most of the work.

What you need: chicken breasts, cream of mushroom soup, cream of chicken soup, dry onion soup mix, mushrooms, pepper and water.

To make: spray slow cooker with non-stick cooking spray. Place chicken breasts in a single layer and season with pepper. In a bowl, add condensed soups, onion soup mix, mushrooms and water, mix well. Pour mixture evenly over chicken and cover. Cook on high for 4 to 5 hours or on low for 7 to 8 hours. Be sure to adjust cooking time according to how fast/slow your cooker cooks.

When ready, shred chicken using two forks. Serve chicken with the gravy over mashed potatoes, rice or egg noodles. Enjoy!

1 can (10.75 ounces) condensed cream of mushroom soup – (or make homemade condensed cream of mushroom soup)
1 can (10.75 ounces) condensed cream of chicken soup (or make homemade condensed cream of chicken soup)
1 packet (1 ounce) Lipton Onion Soup Mix or store brand (or make homemade dry onion soup mix)
8 ounces sliced mushrooms (fresh or canned – if using canned, be sure to drain)
1/3 cup water
pepper

Directions

Spray slow cooker with non-stick cooking spray. Place chicken breasts in a single layer in cooker and season with pepper. In a bowl, mix condensed soups, onion soup mix, mushrooms and water. Mix well. Pour mixture evenly over chicken. Cook on high for 4 to 5 hours or on low for 7 to 8 hours. Be sure to adjust cooking times according to how fast/slow your cooker cooks.

When ready, shred chicken using two forks. Serve chicken with the gravy over mashed potatoes, rice or egg noodles with your favorite vegetable (steamed broccoli, green beans) and a salad. Enjoy!

Looking for an easy meal for the slow cooker, that’s simple to make, versatile, something the whole family will love? I have a great recipe for you, Slow Cooker Fiesta Chicken!

Easy Slow Cooker Shredded Fiesta Chicken – A delicious Mexican inspired shredded chicken recipe that is simple to make and easy to adapt to your taste! Serve the chicken piled high on your favorite rolls/buns, over a rice bowl or make tacos and burritos, adding your favorite Mexican toppings.

What you need to make the chicken: boneless skinless chicken breasts, enchilada sauce, salsa verde and sour cream.

To make: spray slow cooker with non-stick cooking spray. Place chicken breasts in a single layer in cooker. Mix enchilada sauce and salsa verde in a medium size bowl then pour evenly over chicken. Cook on high for 4-5 hours or on low for 6-8 hours (adjust cooking times according to your cooker). When ready, using two forks, shred chicken then add sour cream, stir until blended – cover and cook on low until heated through, about 20 minutes.

Serve the tender chicken piled high on a roll, over rice or serve as tacos and burritos, topped with your favorite Mexican toppings – hot sauce, shredded cheddar cheese, chopped lettuce, diced tomatoes, sliced avocado, fresh cilantro, jalapenos, fresh lime juice and more.

1/2 cup sour cream

Tips

You can easily adapt this recipe to your liking by adjusting the heat for the enchilada sauce and salsa verde (mild, medium, hot). I like to use mild for both and add the heat with hot sauce on my own – that way everyone is happy.
Serve with your favorite Mexican side dishes- corn, rice, beans, chips, guac and salsa. Our favorite sides – Cilantro Lime Rice and Mexican Sweet Corn Cake!
For me, hot sauce is a must-have with this chicken – I use Cholula Hot Sauce (no affiliation, just a fan).
