I’ve seen a lot of slow coooking salsa chicken recipes over the years –
here’s the one that inspired me most for today’s Tried & True Tuesday,
Here’s their recipe slightly adapted:
Ingredients
2 to 3 lbs of boneless chicken breast or thighs (thawed) If you have large chicken breasts, cut in thirds.
1 24 oz jar of salsa (mild, medium or hot – do what you like)
1 4 oz can diced green chilies
1 packet of taco seasoning (1.25 oz)
1/4 cup fresh cilantro chopped
2 limes
*Optional – sour cream & cheddar cheese
Directions
Spray your slow cooker/crock pot with non-stick cooking spray. Place chicken in pot. In a large bowl, mix salsa, green chilies, taco seasoning, cilantro and juice of 1 lime. Pour mixture over chicken and cook on high for 4 to 5 hours.
Serve over rice. Sour cream, cheddar cheese, a little squeeze of fresh lime, garnished with cilantro makes this great dish even better!
For leftovers, if there are any – this chicken makes a great wrap for lunch!
This wrap was made with a tortilla, leftover chicken and chile salsa sauce,
brown rice, black beans & corn, fresh cilantro and lime.
