Today’s tried and true is a fantastic 5 star recipe – Slow Cooker Chunky Chicken Chili!
Slow Cooker Chunky Chicken Chili (Easy)
Only 5 ingredients to make this absolutely delicious, budget friendly chili. This hearty meal is thrown together in minutes, allowing your slow cooker to do most of the work. Big taste with little effort- this recipe is a keeper!
What you need for the chili – boneless skinless chicken thighs, diced tomatoes with green chilies (I used Rotel), tomato sauce, chili seasoning, hominy, salt and pepper. If you are not familiar with hominy, this is the perfect recipe to give them a try. So. Darn. Good.
To make: Spray cooker with non-stick cooking spray. Place chicken in a single layer and lightly salt and pepper. In a large bowl, add Rotel, tomato sauce, hominy and chili seasoning, mixing well then pour evenly over chicken. Cook on low for 6 to 7 hours. Adjust cooking times according to how fast or slow your slow cooker cooks. When ready, break up the chicken using two forks.
Serve as is or with your favorite chili toppings – fresh cilantro, fresh lime juice, cheese, sour cream. This is wonderful served with rice.
I like my chili with rice, fully loaded with fresh cilantro, lime juice, cheddar cheese and a dollop or two of sour cream. So good.

- 1 packet (1 ounce) chili seasoning mix
- 2 cans (15 1/2 ounces each) hominy, drained
Directions

Tips
- The recipe on Betty Crocker calls for adding the hominy at the end but I opted to add them in the beginning. I loved the texture, they were perfect.
- Betty’s recipe calls for 2 cans (14 1/2 ounces each) of diced tomatoes with green chilies. I used 1 can (28 ounces) of Original Rotel.
- You can easily substitute chicken breasts for thighs. Thighs are wonderful in this recipe.
- Not a fan of hominy (I love them, they help make the dish so tasty), you can substitute with kidney beans.

I will indeed give this a try, I have never been good with the slow cooker
and you are so RIGHT!!!!!!!!! GA. is very hot and humid .this is more like August weather,
what part of Ga. are you ? We come from New Jersey but have been here for 40 plus years,
and lived in Charlotte NC for 4 so we are missed placed Yankee’s :-):-)
