Chickpea Salad (Easy Side Dish or Main Dish)
Chickpeas, garden fresh vegetables, herbs and spices tossed in a light olive oil citrus dressing – a filling, guilt-free salad that will keep you satisfied for hours. Serve as a side dish with grilled chicken, fish, burgers, steaks and more. Or top the salad with your favorite protein for a meal. Easy. Simple. Delicious.
Today’s share is a tried and true favorite go-to salad from Skinnytaste. This chickpea salad is super versatile – you can add feta, olives, avocado, your favorite vegetables, dressings, seasonings and more.
What You Need to Make a Chickpea Salad
chickpeas, tomato, cucumber, red onion, lemon juice, extra virgin olive oil, parsley, kosher salt and pepper
I love to add a few dashes of Tajin to this salad, a unique blend of mild chili peppers, lime and sea salt.

Ingredients
- 15 ounce can chickpeas (drained, rinsed)
- 2 1/2 cups cucumber
- 1 cup tomatoes, diced seeded
- 1/4 diced red onion
- 2 Tablespoons fresh lemon juice
- 1/2 tablespoon fresh minced parsley
- 1 Tablespoon extra virgin olive oil
- 1/2 teaspoon kosher salt
- fresh ground black pepper to taste

Tips
This recipe is super easy to adapt. Add your favorite vegetables, avocado, olives, feta and more. Fresh is best, but in a pinch I will use dried herbs from the pantry. I like to add a few dashes of Tajin seasoning.
Add your own dressing to the salad, Greek, Italian, just omit the olive oil and lemon juice in the recipe – this is a great base salad to experiment with.
This salad is excellent served as a side dish with grilled chicken, fish, burgers, steaks and more. Or serve your favorite protein on top.
