With Cinco de Mayo just a few days away, I’m sharing a great dessert to celebrate…Cheater Fried Ice Cream! No frying! Simple to make! Oh so good!
You can even put the fried ice cream in this easy to make, Baked Cinnamon Sugar Tortilla Bowl! Head here for the simple step-by-step directions to make the bowls. The bowls are made with flour tortillas, butter and cinnamon sugar and baked in an oven safe dish. That’s it!
Cheater Fried Ice Cream
Ingredients
- Vanilla Ice Cream
- Honey Bunches of Oats Cereal (I use almond)
- Caramel Sauce
- Cinnamon Sugar
- Whipped Topping (Reddi Wip)
Directions
Pour cereal in a large storage bag that closes – use enough cereal to coat the amount of “fried” ice cream desserts you plan to make. In the bag, crush the cereal into tiny pieces. Next, scoop ice cream into a round ball- make whatever size you like. Place the ball of ice cream in the bag, close it and pack the cereal onto the ice cream, like you are making a snowball. Place ice cream in bowl and top with desired toppings – caramel, fudge, reddi whip, cherries, strawberries…have fun! I always sprinkle a little cinnamon sugar on top! Enjoy!

Tips:
For Parties, you can make the ice cream balls ahead of time. Just place them in a plastic bag and pop them in the freezer…just wait to coat them in cereal right before serving, so they will be crunchy.
If your are planning on using the baked cinnamon sugar tortilla bowls, make the bowls first. This way you can see what size to make the fried ice cream balls, so they fit in the bowls.
