Easier than apple pie – these apple pie bars have an amazing short bread bottom crust and shortbread crumble topping, with a perfect apple filling in the middle. A new family favorite that we will be making for years to come.

These apple pie bars are sturdy and handled easily without falling apart, which is an added plus. They’re perfect for family gatherings and potlucks. You can make them a day ahead and because they are so sturdy, they travel well. They keep on the counter for up to three days, if they last that long.

Apple Pie Bars
- 4 sticks of butter (1 pound), unsalted, at room temperature
- 3/4 cup granulated sugar
- 1/2 cup light brown sugar, lightly packed
- 2 teaspoons pure vanilla extract
- 4 cups all-purpose flour
- 1 1/2 teaspoons kosher salt
- 1/2 cup chopped walnuts
- 1 teaspoon ground cinnamon
- 1 1/2 pounds Granny Smith apples, peeled, quartered, cored and sliced 1/8 inch thick (3 large)
- 1 1/2 pounds Golden Delicious apples, peeled, quartered, cored and sliced 1/8 inch thick (3 large)
- 2 tablespoons freshly squeezed lemon juice
- 1/4 cup granulated sugar
- 1 teaspoon ground cinnamon
- 1/8 teaspoon ground nutmeg
- 4 tablespoons (1/2 stick) butter, unsalted
