Easy Oven Roasted Green Beans and Mushrooms (Easy to Make!)
This deliciously simple, easy to make roasted green beans and mushrooms tossed in olive oil, garlic, balsamic vinegar, salt and pepper, is ready in about 30 minutes, a wonderful side dish for so many meals! It's a perfect side for a busy weeknight, and fancy enough for dinner parties and holidays.
8ouncesfresh mushrooms, cleaned, sliced (I use baby portabella mushrooms, sliced)
2teaspoonsminced garlic
1 ½Tablespoonsextra virgin olive oil
1 ½Tablespoonsbalsamic vinegar
fresh cracked black pepper and sea salt to taste, about 1 teaspoon each
Instructions
Preheat oven to 400 degrees F. Line a baking sheet with parchment paper or foil for easy clean-up.
Wash and trim green beans and mushrooms, dry well with paper towel.
Place green beans and mushrooms in a large bowl, add garlic, olive oil, balsamic and salt and pepper – toss with hands, coating green beans and mushrooms evenly.
Place green beans and mushrooms on a baking sheet in an even, single layer.
Bake on the middle rack of the oven for 20–23 minutes, until green beans reach the desired tenderness. Enjoy!

TipFinely grated Parmesan cheese sprinkled on top after roasting is a great addition.
