Ingredients
2cans(15 ounce cans) sliced peaches in 100% juice, drained
2 containers(8 ounces/ 8 count each) refrigerated crescent roll dough
1cupbutter
⅔ cupbrown sugar,packed
⅔cupgranulated sugar
3teaspoonsground cinnamon, divided - 1 teaspoon to sprinkle on peaches, 2 teaspoons for butter-sugar mixture
1 ½cupsSprite soda
Topping
vanilla ice cream or whipped cream
Instructions
Preheat oven to 350 degrees F. Spray a 9×13 pan with non-stick cooking spray, coating well.
Carefully open crescent roll packages and divide the dough into individual triangles on a clean work space (kitchen counter or cutting board).
Starting at the wide end of a crescent triangle, place 1 or 2 peach slices depending on size, then sprinkle with a little cinnamon, just a pinch, and roll. Roll the dumplings, starting from the wide end, tucking the pointy end underneath. Repeat filling and rolling the remaining dumplings.
Place rolled dumplings in the prepared baking dish.
In a medium size microwave safe bowl, melt the butter, then add the granulated sugar and brown sugar, remaining 2 teaspoons ground cinnamon and mix well until smooth.
Spoon the cinnamon-sugar-butter evenly over the dumplings.
Pour soda AROUND DUMPLINGS, avoid pouring soda on top of the dumplings…this allows the dumplings to get a crispy crust topping!
Bake on the middle rack of the oven for 30–35 minutes. The dumplings are ready when they start to turn golden brown on top and the crescents are thoroughly baked. For fresh peaches, check with a toothpick or fork for desired tenderness.
Remove from oven and allow to cool for about 10 minutes. Serve warm, topped with a scoop of vanilla ice cream or a dollop of whipped cream.
Notes
FRESH PEACHES: You will need about 4 medium peaches, peeled, pits removed and sliced into even wedges. Make sure the peaches are ripe!FROZEN PEACHES: You can use frozen peaches that have been thawed. SODA: Soda helps bake them to ooey gooey perfection and also creates the fantastic sauce. Soda is a must in the recipe! You can use Sprite, 7-Up, Mountain Dew and other similar citrus-style sodas. You can also use zero calorie Fresca.STORING: Store leftover dumplings tightly covered in the refrigerator up to 1–2 days. They are best served while still warm, fresh out of the oven.
