Just five ingredients to make this fantastic viral dip – Sour cream, Rotel (tomatoes and diced green chilies), shredded cheese, corn and a packet of your favorite taco seasoning mix. Sure to be a hit with an empty bowl and requests for the recipe!
Ingredients
16ounces sour cream
10ouncecan Rotel Original (drain excess liquid)
11ouncecan of Mexicorn (drain excess liquid)optional
8ouncesMexican-Style four cheese blend, shredded (can sub with mild or sharp cheddar)
1ouncepacket taco seasoning
Instructions
Pour everything in a medium size bowl (drain the excess liquid from the Mexicorn and Rotel), mix well.
Cover and chill in the fridge for an hour or two before serving.
Serve with your favorite tortilla chips, pita chips or Frito scoops.
Optional - for presentation, garnish with diced tomatoes, sliced/chopped/diced jalapeños or fresh cilantro.
Notes
Rotel is a brand of canned diced tomatoes and green chilies. You can use store brand too.
Mexicorn is whole kernel corn with diced red and green bell peppers. Regular corn can be subbed for Mexicorn. If you are not a fan of corn, skip it. This dip is great with and without corn.
Cheese Substitute - shredded mild and sharp cheddar work great!
This dip is easy to adapt! It's not too spicy, but has lots of flavor. You can easily adapt it by adding heat using a can of Hot Rotel instead of original, adding a small can of diced green chilies, or adding some diced jalapeños.
Add Meat - add some cooked ground beef or sausage for a hearty dip!
OPTIONAL - for a pretty presentation, garnish with diced tomatoes, sliced/chopped/diced jalapeños or fresh cilantro.
