Today I’m sharing my youngest’s favorite meal, Chicken & Spinach Fettuccine Alfredo!
This isn’t something we make on a regular basis – it’s super rich, really fattening, and oh so good! I make this about once a year, usually for my daughter’s birthday. During our visit to Alaska, my sister made this for my little one…she was smiling ear to ear. Simple to make, so so good.
Chicken and Spinach Fettuccine Alfredo
(Recipe adapted from the Joy of Cooking ~ 1997 edition)
Ingredients
- 16 oz box of fettuccine
- 2-3 *boneless skinless chicken breasts (1 to 1 1/2 lbs)
- 1/2 cup of butter (one stick of salted or unsalted butter)
- 1 cup of heavy cream
- 1 1/4 cup of freshly grated Parmesan cheese
- 2-3 tbsp of extra virgin olive oil (enough to coat bottom of skillet to cook chicken)
- 6 oz bag of *fresh baby spinach
- salt and freshly ground black pepper to taste
Directions
First, start to boil your water in a large pot for the fettuccine. Next, using a large skillet, on medium to medium-high heat, heat the olive oil. Add chicken breasts and lightly salt. Cook chicken breasts until done, cut into bite size pieces – set aside, keeping them warm. Cook the fettuccine according to directions on the package. Once the fettuccine is ready, drain. Using the same pot, place the 1/2 cup of butter on the bottom of the pot and pour the drained fettuccine on top. Next, pour the heavy cream and grated Parmesan on top and fold until both cheese and butter are melted and blended with the fettuccine. Last, add your chicken and baby spinach and fold them into the fettuccine until blended well. Serve immediately. Salt and pepper to taste. Enjoy!
Tips
Be sure to use real butter and heavy cream, don’t skimp on the good stuff!
Recipe variations – you can skip one or both, chicken and spinach – for simple Fettuccine Alfredo.

Looks delicious. My boy loves fettucine alfredo but I rarely make it from homemade. I'll bet he would even eat his spinach this way. 😉

Hi Sherry, I haven't found a kid that doesn't LOVE this dish! What's not to love, pasta with heavy cream, Parmesan cheese….butter! You don't have to use the spinach…you can divide the pasta and add the spinach to the other half…my sister does that for one of her boys – easy to do! But I think your son would gobble up the spinach! ;o)

My sister made this one pictured above :O) It is really easy and REALLY good! Really really good. Too bad is so fattening. I could try to make a skinny version, but I just don't see the point. Pasta is loaded with so many calories, you might as well do it right and save this recipe for special occasions….like birthdays! I wish everyday was my birthday!
