Today I am sharing two awesome recipes with only a few ingredients each that are simple to make, so darn good – Rolo Turtles and Princess Cookies (Peanut Butter, Chocolate Cookie Sandwiches). These are favorites during the holidays, always the first to go on holiday cookie trays! Warning….they are irresistible, you may want to make extra.
First Recipe, Easy Rolo Turtles
Only 3 Ingredients -Pretzels, Rolos and Pecans.
These are a cinch to make, sooo good!! THEY GET DEVOURED!! This holiday favorite is always the first to go on cookie trays!!
I mentioned before, our youngest has an egg allergy, it can be difficult finding easy treats that don’t contain egg. A lot of the egg-free recipes out there are time-consuming with a lot of ingredients. It’s nice to have easy, go-to recipes that don’t compromise on taste. These are awesome and so delicious!
- Bag of Pretzels Squares or Rounds (You can use regular snaps, round or square pretzels. Butter and round were all I could find at our store that day, they were great)
- Bag of Rolos- approx 56 rolos in 12 oz. bag
- Bag of Pecan Halves
Directions
Preheat oven to 250*F Line baking sheet with parchment paper.
Line the pretzels on a cookie sheet, place a Rolo on top of each pretzel. Bake 4–5 mins, just long enough for the Rolo to get soft, DO NOT OVER BAKE. Pull from oven, take a pecan half and lightly press down on top of Rolo. Cool. Eat. Yum.

Princess Cookies Recipe
Ingredients
- 1 box of Wheat Thins
- Creamy peanut butter
- White or milk chocolate
- Sprinkles
Direction
Make peanut butter sandwiches with the Wheat Thins. Next dip them in white or milk chocolate, place on parchment or wax paper, add some sprinkles, allow chocolate to set…you’re done. Enjoy!
Both recipes will go fast, you might want to make extra to stash away for yourself! They truly are that good.

Can you tell me how far in advance of Christmas Eve a person can make the rolo turtles?

Those sound fun! On the Princess Cookies, it would be interesting to try other nut butters including some chocolate ones. You could also sub an M&M or 1/2 a candied cherry for those with nut allergies.
