It’s not Jan 1st yet, that means there’s more baking to be done. Besides, I have a pantry full of ingredients I’d like to clear out before that annual New Year’s resolution starts.
Cake mix cookies are another recipe I’ve seen floating around the internet and Pinterest. They are as easy as the peanut butter cookies and good! Who knew! I decided to try a bunch of different cookies with the same recipe. I used one Devil’s Food cake mix. You can use any cake mix and have fun with different flavors and add-ons (chips, nuts). I used Rolos, mini peanut butter cups, mini chocolate chips and Andes Mints in one batch. Like I said, I have a lot of stuff in my pantry that needs to go….why not use them in new cookie adventure!
So here’s what I made with ONE box of cake mix:
Ingredients for a Basic Cookie:
1 box of cake Mix (I used Devil’s Food)
1/2 cup of veg oil
2 eggs
1 cup mini choc chips (or reg size) – Add more if you like.
*Peanut butter chips would taste great!
Optional ingredients I used:
Mini chocolate chips
Rolos
Andres Mints
Mini Peanut Butter Cups
Powdered Sugar
Directions:
Preheat oven to 350 degree F.
Mix cake mix, oil and eggs in large bowl until blended well. Next, if you’re using chips, add them now.
Drop spoonfuls of cookie dough on cookie sheet. Bake for 8-10 mins.
NO NOT OVER BAKE!
Andes Mint Cookies:
Bake cookies as directed above. Once you remove cookies from oven, place one Andes mint on top of each hot cookie, wait a few mints, take spoon and spread mint like frosting.
Rolos Cookies:
Take spoonful of dough, mold dough around a single Rolo, place on cookie sheet, bake 8-10 mins.

Peanut Butter Cup Cookies:
Take spoonful of dough, mold dough around a single mini peanut butter cup, place on cookie sheet, bake 8-10 mins.
Crinkle Cookies (powdered sugar)
Take spoonful of cookie dough, form in a ball, roll in powered sugar. Place on cookie sheet, allow to dry for a few minutes, roll dough one more time in powered sugar. Bake for 8-10 mins. These were as yummy as they were pretty!
